  1. In a large skillet over medium-high heat, warm enchilada sauce 2-3 minutes.
  2. Add in green chilis, olives, salt, oregano, and chicken breasts- cover. Cook until chicken is no longer pink and juices run clear – about 15 minutes. (can flip halfway so both sides cook evenly)
  3. Turn heat to low-medium, remove chicken to cutting board. Cool slightly and chop or shred into bite sized pieces.
  4. Add sour cream to sauce and stir to combine. Return chicken to pan along with the cut tortillas pieces. Stir well, mixture will be thick.
  5. Top with shredded cheese, cover and cook until cheese has melted, 5-10 minutes. Serve with desired toppings.
Recipe Notes

Additional toppings include chopped green onion, tomatoes, hot sauce, additional sour cream, etc.
