Easy Weeknight Chicken Fajitas

This is a super quick and easy meal to whip up on the fly. The Hubs gets so excited whenever he sees fajitas on the weekly menu! Tonight when I made it was actually the very first time I measured any of the spices. Lol, I like to just sprinkle a bit of this and that, cross my fingers, and hope for the best. Might not be the ideal way to cook, but its been working for me for years! We also cook up some Rice-A-Roni Mexican Style rice to either go in the wraps or on the side.

                    

You can add any toppings you’d like, we usually go with sour cream, guacamole, salsa, and shredded cheese. I don’t think these would be considered an actual fajita, but maybe a mexican wrap of sorts? Either way, we love them!

Instructions
  1. Combine seasoning mix & set aside.
  2. Slice chicken thin, dust half of seasoning on chicken. Heat 2 T oil in a large skillet on medium-high heat.
  3. Cook chicken until no longer pink and juices run clear, flipping once. Remove from pan & set aside.
  4. Add peppers, onions, and remaining seasoning to the pan. Cook until veggies are tender.
  5. Add chicken back to pan & stir to combine.
  6. Heat tortillas (in a pan or microwave), set out any additional toppings, and build fajitas to your liking.
Recipe Notes

Additional toppings can include just about anything! We enjoy sour cream, guacamole, salsa, shredded cheese, and mexican style Rice-A-Roni.
