I love Christmas morning. Twinkling lights on the tree, stockings bulging with all sorts of goodies, and our traditional Christmas breakfast.

This egg dish has been enjoyed by so many people over the years, and I can’t remember a Christmas morning without it! The best thing, though, is that it doesn’t involve any work the day its meant to be eaten. Did you read the recipe name? Eggs A Day Ahead means just that. Make them the day ahead!

  1. Mix eggs and milk, soft scramble in butter.
  2. In another bowl, mix diluted soup and grated cheese, heat to melt cheese.
  3. In a 3-quart casserole dish, layer 1/3 egg mixture, 1/3 sauce, and repeat twice.
  4. Cover and refrigerate overnight.
  5. Preheat oven to 300.
  6. Top with sauteed mushrooms before baking, covered, for 1 hour or until heated through and bubbling slightly.
