This is a very refreshing salad perfect for a summer evening! The dressing is so bright, and goes really well with a sweet apple. Even my carnivore husband comments on how flavorful this salad is!

Salad Fixings
  • 6 cup greens romaine, kale, spinach, etc
  • 2 medium carrots peeled & sliced thin
  • 2 ribs celery sliced thin
  • 1 medium apple cored & sliced thin
  • 1/4 cup almonds sliced & toasted

Salad Fixings
  • 6 cup greens romaine, kale, spinach, etc
  • 2 medium carrots peeled & sliced thin
  • 2 ribs celery sliced thin
  • 1 medium apple cored & sliced thin
  • 1/4 cup almonds sliced & toasted
Instructions
  1. Marinade chicken with 2T of dressing in a bag for at east 4 hours, preferably overnight.
  2. Grill or pan fry chicken until no longer pink and juices run clear, let stand 5 minutes before slicing thin.
  3. Toss remaining dressing with salad fixings, top with grilled chicken.
