Quick Chicken Parmigiana
How many times has this happened to you… No plan for dinner and you find yourself starring at the pantry.
That was totally me the other night, and I’m usually so organized when it comes to dinners! I suppose that’s what happens in a new month when I didn’t pre-write my meals on the calendar. Turn the page and… it was blank! Oops.
Thank goodness I always keep a few select pantry items on hand. This time it was pasta sauce and breadcrumbs to the rescue, and I just happened to have some chicken breasts in the fridge! Throw a little mozzarella cheese into the mix with a veggie on the side, and voila! Dinner is served.
This is by far the easiest method for making chicken parmigiana that I have ever found. From start to finish it only takes 40 minutes, and 35 minutes of that it’s sitting in the oven!
